Sunday Bakes // Double Chocolate Biscotti


In my mind, biscotti are the perfect bake to dunk in hot drinks. Hailing from Italy, they are traditionally served a long side a steaming cup of coffee. But they also go down very well with the more British cup of breakfast tea!


Traditionally, biscotti are made with almonds. However, I decided to adapt a pinterest recipe without them, adding both dark and milk chocolate to give it that indulgent, melt in your mouth taste. So here is my recipe to make a literal mountain of biscotti!



Double Chocolate Biscotti
Makes 36-40 

Ingredients

1/2 cup softened butter
1 cup brown sugar
2 large eggs
1 TSP vanilla extract
2 1/2 cups plain flour
2 TSP baking powder
1/2 TSP salt
1 cup milk chocolate chips
1 cup dark chocolate chips

Instructions 

Preheat the oven to 180C.
In a large mixing bowl, cream together the butter and sugar.
Add the eggs and vanilla extract and combine.
Next, add the flour, baking powder and salt, and mix together to form a dough.
Once combined, fold in the chocolate chips.
Shape the dough in to two logs (about 2" by 10") and place on a prepared baking sheet.
Bake for 22 minutes, then remove from the oven and allow to cool for 30 mins or so.


Lower the oven temperature to 150C.
Slice the logs into slices, around 1/2" thick, and place on baking sheet. 
Bake for 15 minutes, then remove from the oven, flip them over, and bake for another 15 minutes.
Remove from the oven and allow to cool!



Grab a brew and dig in!
