Sunday Bakes // Dark Chocolate HobNobs


I have a theory about why HobNobs are such a popular biscuit in the UK. I think it all boils down to the fact that they are super sturdy and dunkable. They can withstand a lot of tea dunking, which is something us brits are known for!

Coupled with a thick layer of dark chocolate, these make for the perfect afternoon pick me up.

I love love LOVE Sundays. The one day where it seems acceptable to do as little or as much as you wish. 

There are lots of things I like to do on my lazy (or not so) Sundays. I like going out for a walk, spending a few hours reading, and watching some of my favourite TV shows. But most of all, I love spending the day baking.

September Wish List


September is here, and with it autumn has arrived in the UK. Despite a gloriously sunny birthday weekend, the end of August has been a bit abysmal in terms of weather, and it seems that summer is truly over! I am a real summer lover, so this is a pretty sad time for me, but I am willing to embrace cool autumnal days if it means the countdown to Christmas can begin (yes, I said the C word!!).

Afternoon Tea at Stapleford Park

After a wonderful weekend celebrating our 21st surrounded by our friends and family, Molly and I extended our celebrations with an afternoon tea for two at Stapleford Park. We received a voucher from our close family friends, and thought we may as well use it whilst we are both still at home.

Glamping in Norfolk


Although jet setting to new countries is always exciting and something I love to do, sometimes there is nothing better than a trip exploring your own country. The UK has so much to offer, with such a diversity of places to visit, from city breaks to sea-side stays, you are never short of places to explore or return to.

With this in mind, I booked a mid-week stay to Norfolk for James' birthday.

James had mentioned once or twice how he fancied going camping again, so I met him in the middle and booked us in to a Shepherd's Hut for a spot of glamping at Woodstock Farm.

Marrakech Part Three // Moroccan Adventure




Our time in Marrakech was quickly coming to an end. With just one full day left, we set out to explore a few of the tourist sites we hadn't yet seen.

First up was the Ben Youssef Madrasa, an ancient Islamic college which was founded in the 14th century, and re-opened as a historical site in 1982.

Essaouira // Moroccan Adventures

Following our successful first trip of the holiday to the Ouzoud Falls, Emma and I decided to spend a day exploring Essouria. For any Game of Thrones fans, this is the location used for 'Slavers Bay', which was a very exciting concept for the both of us, as HUGE GoT fans!

We set out in our mini bus, stopping off to take some snaps of goats in trees (?!).

Me and Emma decided to make Moroccan cuisine part of our trip by taking a cooking class. The class was booked through our hostel, Rainbow Marrakech, and took place at their sister Riad.

Morocco has been top of my wander lust list for as long as I can remember. Something about the vibrant colours, bustling atmosphere and exotic food always appealed to me. 

At the start of July, Emma and I boarded a flight heading to the Moroccan capital, Marrakech. We had been planning our trip away for months, so eagerly stepped off the plane into the blazing heat ready for an adventure.

I have travelled to Northern Africa with my best friend Emma to explore the streets of Marrakech, lots of posts to follow! It was a real assault on the senses, and we had the most amazing time soaking up the culture, and the 45 degree heat! I am also now officially a graduate! You can call me Rosie McKay BA (Hons) ;).

All Natural Fudge Chocolate Squares



I don't know about you, but I can lose hours and hours searching Pinterest for exciting recipes. I have separate boards for a variety of courses, from drinks to veggie dishes. My favourite board to add to though has to be my baking/treat board

On Sunday, James and I spent the day in the kitchen baking up some treats. All three recipes we followed came from Pinterest, it really is the greatest and most extensive cook book you could ever ask for! 

This Week's Happiness List


As I write this, I am nervously awaiting my degree classification results coming through! So I thought I would write this post to take my mind off it for a little while!

This week has been INSANELY hot in the UK. I have personally loved it, I tried not to moan about being hot as I have spent the past however many months feeling freezing cold 90% of the time! It was nice to sit in the garden with an ice cold drink, my favourite being a cold brewed fruit tea with plenty of ice!

1. Driving again! I have missed being behind the wheel, and being able to drive, even if it is just ferrying my parents around ;), still makes me feel mature and like a real grown up!

2. A family BBQ on Wednesday, the hottest July day on record! We had plenty of salads and I enjoyed some prawn skewers. 

3. A walk in the countryside near my house one afternoon. I fancied getting out of the house for a bit, so headed out in the sun and cleared my head.

4. Lebanese feasting on Friday night. James and I made an array of Lebanese dishes and kindly shared them with my step-dad, who sang our praises non-stop!

5. A typical James & Rosie Sunday filled with baking! We made earl grey shortbread, carrot cake oatmeal cookies and healthy chocolate fudge squares (recipe post to follow).

Ljubljana Part Two // Slovenian Adventure

Following our morning walking tour, Bex and I decided to make the steep descent to Ljubljana Castle.
The castle sits a top a hill over looking the city. It is really quite a magnificent sit to see such a structure perched atop a hill in the centre of a capital city. It is certainly a world away from the main high rise tourist attractions of London such as the shard!

Ljubljana Part One // Slovenian Adventure


Friendship is all about sharing. Bex and I both share a love for travelling. Bex spent her gap year travelling around Asia and finishing in New York, and I have spent the past two summers exploring Europe! We decided we fancied a little trip away, and after discussing a few destinations, we decided on Ljubljana, the capital city of Slovenia.

I love the saying 'travel is the only thing you can buy which makes you richer'. It goes without saying that I love a good trip away, and this week has been spent exploring the beauty of Slovenia with my friend Bex. We woke up bright and early on Tuesday morning to head to Luton (shout out to James for being a gem and driving us there at 5am!) for our early flight out to Ljubljana. We spent the week sightseeing, biking, kayaking and being general tourists in the beautiful country. Several Slovenian blog posts to come, but for now here are some of my happy moments:

It was a real break away after a stressful year for the both of us at university, and I felt the most relaxed I have felt in a long, long time! Here is to our next trip to Barcelona, along with the rest of the gang!

This Week's Happiness List


I spent the first half of the week unpacking all of my belongings from Liverpool and desperately trying to fit it into my room. After an hour or so panic searching I found my passport (phew!) and I am now eagerly awaiting tomorrow as Bex and I head off to Luton to catch our flight to Ljubljana! Summer Bucket list



With June well under away, summer 2015 is now well and truly upon us. 
This is a BIG summer for me. In July I will be graduating from University of Liverpool, and in August I will turn the big 21. Come September, I will begin my graduate career. So in essence, this is my last proper long student style summer (even though I am no longer a student, sad times!).

This Week's Happiness List


This week has marked my first as a graduand. No exams, no coursework, no worries! I spent the first half of the week in Liverpool sorting all my stuff out and seeing friends before leaving Liverpool for good on Wednesday. I started back working at M&S on Thursday (no rest for the wicked), so my room is currently looking a lot like an episode of the hoarder next door!

Here are the things which have made this week a great one:

1. Chilling in bed watching kids films. I watched Cloudy with a chance of meatballs 2 and How to train your dragon 2 at the start of the week, and loved them both! I do love watching animated films, they are just easy to watch and don't require much brain work, just what I needed after a hectic year of University work. Plus, the momentous number of food puns in CWACOM 2 really cheered me up!

2. Visiting my friend Harley in Manchester for the day. You can read all about our day here. It was great to have a catch up and have someone to share my monkeys (worries) with.

3. Barbecuing at Greenbank Park to celebrate my friends birthday. It was the best way to spend my last evening in Liverpool.

4.  Drinking the best gin & tonic I have ever had the pleasure of trying at Botanical Gardens, Liverpool. My friend George and I enjoyed a large glass of my favourite tipple lounging on the deck chairs in the sunshine, and it was blissful. I urge anyone in the Liverpool area to pay the gin garden a visit before it closes in September. Head to the Baltic Triangle to see what all the fuss is about!

5. Spending the day in Cambridge with James and his parents. We parked up at the Orchard Tea Rooms in Grantchester, walked along the river cam in to Cambridge, lunched and shopped. It was a wonderful day and the best way to end a wonderful, but tiring week.

Liverpool Bucket List: The Final Instalment

One thing Liverpool is certainly not short of (other than friendliness) is great independents. Independent Liverpool is testament to this, a company which links up Liverpool's small businesses to allow everyone to explore what Liverpool is really about. 

After finishing my exam on Friday, Emma and I embarked on a bit of a food crawl in a last ditch attempt to cross off some more places from our Liverpool bucket list before graduating.

This Week's Happiness List



This week has been a pretty momentous one for me. After weeks of revising and long days in the library, I have finished exams, and with that University! As of Friday at 12pm I am now a graduand, and couldn't be more relieved! It is a bizarre time, with my emotions being a little all over the place. I cannot work out if I am relieved or anxious about finishing.

From here on out I will be spending a lot more time improving my blog and getting up to lots of fun and frivolities before embarking on my graduate career in September.

Cheers to the weekend!

1. Going for the chop. I decided to get my hair cut in to a long bob, and I am very pleased with it! It feels much bouncier and doesn't fall out all over the place, result!

2. The sun coming out just at the right time. As I left the library a few days this week, the sun was shining and it automatically put me in a better mood.

3. The Head Space app. I downloaded the mindfulness app from the google play store and have been starting every morning with the 10 minute meditation exercises. I feel they really set me up for the day, and it is definitely something I will continue doing.

4. Discovering Soulpancake youtube channel. I had seen the kid president videos before, but in researching forgiveness for one of my exams I discovered the channel and all the wonderful videos there are. I highly recommend the 'science of love' and 'science of happiness' ones. 

5. Completing my final ever exam and with it 17 years in education! I celebrated on Friday night at the Great Gatsby themed summer ball at the guild of students, drinking prosecco and dancing the night away!

The past week has been a mixed bag for me. I had a wonderfully busy weekend and then I travelled to James' on Monday to spend the week at his revising whilst he was at work. My exams begin on Tuesday, so I am spending my days in the library, so thought a change of scenery would help! I arrived back in Liverpool on Thursday to glorious sunshine, ready to tackle my exams and finish off my degree!

Healthy Chocolate Truffles

Chocolate is one of life's greatest and simplest little pleasures. Personally, I am a dark chocolate fan. I love the bitter taste and how it just melts in your mouth. Divine. 

When I saw this recipe  on Pinterest I was more than a little intrigued. I've always fancied making my own truffles, and these are the easiest to make ever. As an added bonus, they are made with minimal ingredients, and by using fat-free greek yoghurt they are a great healthier alternative to a traditional box of chocolates!

Carrot Cake Energy Bites

It has been an age since I last posted a recipe, and I thought it was high time I posted another. I decided to adapt a recipe I had pinned a few weeks back, clean eating carrot cake bites. My no bake snicker energy bites have become one of my favourite things to make, and they always receive rave reviews, so making a variation of these energy bites was a no brainer. 

These are perfect to make to power you through a library session, the afternoon munchies and as a post workout energy boost. 

To make a batch of carrot cake energy bites you will need:

- 1 cup oats
- 1/2 cup grated carrot
- 1/4 cup raisins
- 1/4 flaked almonds
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/3 cup of smooth peanut butter 
- 1/4 cup honey

This Week's Happiness List




I just love this image. I currently have it as my phone background so that every time I glance at my phone (probably too often!) I get reminded of this lovely little message. This week the weather has been typically British spring time weather, raining one minute and sunny the next. I only have a few weeks left in Liverpool, so am trying to enjoy every moment and savour all the little things, which is helping towards my goal of being happier!

1. Once Upon A Time on Netflix. Probably THE worst time for me to get addicted to a TV series, but I find watching an episode at night lets me relax and forget about my worries for exams. I had seen a lot of people blogging/talking about this series, and thought I would give it a go. Needless to say, I am hooked. Fantasy and fairy tales are just my thing.

2. Laughing at funny videos online. I love watching something someone has shared on facebook/twitter and genuinely laughing out loud. This week I have been giggling at Hugo age 2 #thuglife, this baby trying avocado for the first time and basically anything posted by Doug the pug. If you need cheering up, I highly recommend a watch of any of these.

3. Bagging myself another New Look bargain, a new pair of trousers which were a steal in the sale. They are super comfy and will come in handy for work come September!

4. A meal out with my friends on Friday night. I joined a group of my uni friends for a meal at Salt House Bacaro for small plate, drinks and laughs, and it was an absolute delight. The food was beyond amazing, and the company even better!

5. Drinks with my house mates. We headed to concert square for a few drinks to celebrate the end of uni for Jess and Emily as they will be leaving Liverpool in the next few days. I cannot believe how fast the year has gone!

This Week's Happiness List


The past week has been a bit of a strange one for me. After weeks of slaving away on University assignments, this week has been a little quiet in terms of studying. It feels a little like the calm before the storm of finals. I am taking a bit of time to get geared up for a few weeks of hard core revising and studying as much as possible so I can finish my time at University doing as well as possible. For now, here are the things which made me happy this past week.

1. A good old catch up with one of my oldest and closest friends, Beth, on bank holiday Monday. We met at Leaf on Bold Street as Beth was up visiting her sister for the weekend. I love those moments with friends you haven't seen for ages when you have so much to chat about & catch up on. 

2. Booking my first holiday of the summer! Bex and I booked our flights to go to Ljubljana in June, and I am beyond excited to visit somewhere new. I have been reading up on places to visit in what has been termed the most underrated city in Europe!

3. Voting for the first time on Thursday. It was the UK general election on Thursday, and the first time I have been eligible to cast my vote at such a big event. It really made me stop and think about how lucky we are to live in a democracy in which we have a say in what happens to our country, something which so many people around the world miss out on. 

4. Getting a blow dry in preparation for the AU awards night on Friday. I now love going to the hairdressers, something which I never thought I would say, mainly for the head massage they give you when washing your hair!

5. AU awards night on Friday night at the Adelphi. It was a bitter sweet night, a lovely chance to spend the evening with some of my closest friends, but also it signalled the end of an era as the last official event in the sporting year, and the last event I will attend as a member of the Liverpool Foxes Cheerleading club.

Date Night at The Quarter

Liverpool really is an amazing place to be right now. 

There are so many fantastic independent eateries, bars and projects going on around the city,and there seems to be a real buzz in the air.

Bold Street thus far has been my favourite place to go to get a real taste of this side of Liverpool. Recently however, I have been trying to branch out and experience some other independents which the city has to offer. Nestled between the Philharmonic and the Anglican Cathedral is The Quarter on Falkner Street, a deli and restaurant which is a real hidden gem.

This Week's Happiness List



I am now fully settled back into life at University, and the weeks seem to be flying by. It is only a month until I finish my finals and just over that till I leave Liverpool for good. This is a very scary thought, but exciting too as it means the start of a new chapter! So, before I get carried away talking about the future, here are the things which kept me happy in the here and now:

1. Cheer awards meal at PanAm. On Monday night, myself and 80 or so cheerleaders headed to Albert Docks to celebrate the end of the cheer year with an awards night and meal at PanAm restaurant. It was a wonderful night, and I can't believe after three years being on the team it is all over!

2. New shoes from New Look. I picked up a lovely pair of pastel heels to wear to the previously mentioned awards night, and using my student discount meant they were pretty cheap too! New Look shoes are the comfiest heels EVERRRR. I must thank Little Miss Katy for her recommendation!

3. Starting to plan some trips away this summer. The excitement is starting to build up now.

4. Using turnitin for the final time! I handed in my last essay for my course on Friday, meaning the only thing standing between me and a degree is one presentation and final exams.

5. A weekend with James. James came to visit me for the weekend and we had a lovely weekend which topped off a fortnight of slaving away at my assignments.

For many, it is also a time of immense pressure and stress as exams loom. To keep a happy heart and not delve too deeply into finals woes, I have written a wish list for what I am lusting for this month.

This Week's Happiness List



Following a long break at home for the Easter holidays, this week saw me return to Liverpool to begin my final stretch of the University term before finishing finals in June and graduating in July. I am still in denial that I am going to be going in to the big wide world come September, and have spent a lot of this week making initial plans to go to a host of different places this summer to make the most out of my last ever long summer holiday.

Everyone living in the UK will know how wonderful the weather has been this past week, which for me at least is an instant mood enhancer. I must apologise for being so terribly British as two of my happy things this week revolve around the weather! So here goes;

1. Upon returning to Liverpool on Sunday, I was greeted at Lime Street station by beautiful weather. The sun shone as I walked home, and I took the time to take in as much vitamin D as I possibly could! 

2. An Ocado delivery. Now this is the stuff which dreams are made on. I have never used the service for myself before, but at home we regularly get Ocado deliveries, and with limited time due to assignments and empty cupboards after the Easter break, I decided to treat myself. The treat was made extra special thanks to the 25% off on your first order. Go on, I know you want to!

3. Eating lunch al fresco on Abercromby Square to break up the long library days. 

4. Glorious! Soup. In the previously mentioned Ocado shop I ordered a few pots of the San Antonio Fiesta soup. It lives up to the name, fiery and flavoursome in equal measures. 

5. Every part of Friday. I had a productive morning doing my assignment, followed by afternoon tea at Panoramic 34 with Emma, and then spent the evening at a party in celebration of Becky's 21st birthday! One of the best Fridays I've had in a long time.

What better way to celebrate a 21st than with tea and cake?!

For Emma's birthday I booked us in for afternoon tea at Panoramic 34, a restaurant famous for it's magnificent views of the Liverpool skyline. After a morning of working in the library, we met up and practically skipped down to West Tower, excitedly nattering about what was in store for us. 

We arrived and were swiftly seated, and sat in awe at the incredible view in front of us.

This Weeks Happiness List


This week can be defined as one combining work and play!
I spent the weekend away in London, attending a surprise party for my wonderful friend Steph's 21st (more on that later!), followed by a week of working at M&S. This weekend marks the end of my Easter holidays, meaning the next few weeks are going to be busy, stressful and overwhelming as I come to the end of my university career. However, for now I will concentrate on the little things which have increased my happiness this past week!

1. Dinner at Leon at Kings Cross Station. I have walked past this healthy fast food stop a hundred times, and always wanted to go in for a bite to eat. That day finally arrived last Saturday when Molly and I found ourselves in London for the weekend. It lived up to my expectations, a speedy and super nutritious dinner before heading over to Kingston. 

2. As previously mentioned, Molly and I hopped on a train (or two) down to the capital to celebrate our close friend Steph's 21st. Her boyfriend had organised a surprise party at the Slug and Lettuce, Kingston. Thankfully, everything went to plan, and Steph seemed delighted by the surprise, and it was so nice to have a night out with some of my closest friends!

3. Game of Thrones, Season 5 premier. Need I say more?

4. Finding a hardback copy of Harry Potter and the Goblet of Fire in Oxfam for £2.49! I was missing this book in the series, and was delighted to pick up such a bargain.

5. Watching Gogglebox on Friday night, snuggled up on the sofa with my sisters, wearing our pyjamas and giggling at the Goggleboxers antics!

This Weeks Happiness List


Following the family fun and frivolities of the Easter weekend, this week has comprised of working and seeing old school friends. Also, the sun has been out for most of the week, which has been amazing when I have been able to get outside, but not so ideal when I am doing shifts at M&S food hall, which is nicely positioned in the basement away from the natural light. Hey ho, at least I am not being teased by the sight of the sun streaming through the windows!

Happy Easter Sunday everyone. I hope your day is filled with chocolate, family time and happiness. With it being the Easter holidays, I am home for a few weeks, and looking forward to spending time with my family and KG friends, as well as earning some money working. 
After a celebration packed weekend, I returned to Liverpool on Sunday night for a week of training (more on that later!), before making the trip back down South again for Easter!

1. Dining out with Anna and Becky on Monday night at Bistro Jacques. With us all staying in Liverpool to train for our competition at the end of the week, we decided to treat ourselves to a meal out. The restaurant has a lovely atmosphere, with friendly staff and delicious dishes. Unfortunately, we skipped with 2 courses and a bottle of wine for £16.95 due to aforementioned training, but will definitely be taking up this offer soon!

2.  Enjoying a cocktail at Revolutions on the Albert dock, looking across the dock and sipping on a raspberry & basil mojito, what more could you wish for.

3. Celebrating 4 years with James. Although we couldn't be together on the day, it made me really happy to wake up to a phone call from James on Wednesday to wish me a happy anniversary, and thankfully we have been able to spend this weekend together! Here is to four more years!

4. BCA Nationals Cheer and Dance competition on Thursday, which saw my team and I win our category (Jazz dance), making us National Champions. The day was wonderful, and obviously coming away with the top prize and a HUGE trophy topped it all off.

5. M&S Easter eggs. As I am back working at the M&S Nottingham store for Easter, I have been enjoying looking at all the amazing Easter treats. The eggs are really phenomenal this year, some of them are like works of art! I hope to get one for a bargain next week to try!

April Wish List


I love April. As well as being a month full of flowers, lambs and blossom, it also includes Easter! Easter is like a mini, less stressful Christmas. It is a time to see family and friends and enjoy the little things in life, including some chocolate, of course! April is set to be a busy month for me, which makes it even more exciting!

A Weekend at Home

After celebrating Emma and Ellen's birthdays on Friday night, I hopped on the train back home for the night. My flying visit home was in honour of celebrating my Grandparents golden wedding anniversary on Sunday. I admire them both for making it to 50 years of marriage, it really is a feat!

Before the celebrations began on Sunday, my Mum organised a 'safari supper' at home. The concept is simple, each couple prepares a course, but it must be kept top secret until the food is served. You then score each other and the winner is crowned at the end!

Naturally, we started with champagne and olives.

This Weeks Happiness List


The past week has mainly consisted of me sitting in the library trying desperately to get my thoughts to form a decent enough argument for my Philosophy essay. After handing it in Thursday evening, I felt that oh so brilliant sense of relief. I now only have 2 more coursework assessments to go before the revision starts for finals, scary stuff! I am spending the weekend at home, which always makes for a good time. In fact, I am currently sat watching the rugby with James by my side getting frustrated with England's performance so far!
