A Taste of Greece- Ultimate Summer Salad



Watermelons are one of the ultimate summer foods. Refreshing, cool and sweet, they always remind me of summer al fresco dining, and holidays on the beach in the scorching sun.

Although usually eaten alone or alongside other fruits in a summer fruit salad, watermelon also goes great as a savoury side, or light summer dinner. This watermelon salad is taken from an old Good Food magazine, and is so easy to create, it can be knocked up in a number of minutes.



For this easy recipe you will need:

1/2 watermelon
handful of parsley
handful of fresh mint
200g feta
handful of olives (black/green, you decide!)
1 red onion

I've made the recipe twice now, first for a family BBQ as a side dish, and secondly as a light dinner for James and I. Both times there were left overs, and it keeps well in the fridge for a few days, perfect for lunch the next day!



Chop the watermelon in half and cut into chunks, removing the seeds as you go. 



Rip off a handful of parsley, wash and chop, then add to the watermelon. Do the same with a handful of mint.


Grab a handful of olives (see told you it was easy!), halve and throw on top.


Cube the feta, add to the bowl and mix away.


Finely slice the onion.


Top the salad with the onion and serve away.

For our dinner, James and I enjoyed the salad with my home made flatbread and hummus!
